Never mind volunteering. There’s plenty of time to get exposed to the various items.

Master the techniques, especially knife techniques.
Your library should include these three reference books:

– Larousse’s Gastronomique
– Professional Chef (from the Culinary Institute of America)
– Techniques by Jacques Pepin

Experiment with ingredients, being mindful of modern cooking temperatures and tastes.

When you’ve finished your culinary school training, do internships under the teaching of great chefs (not necessarily famous ones).

Don’t volunteer. You can get paid while learning if you are willing to sub in for cooks who call in sick or go on vacation. Fill out some applications.
Cook every recipe in the book The Joy Of Cooking and you will be a pro. It is excellent training..
