I would use a slightly different spread for toasting - try olive oil with a little garlic or mayo instead of butter. What I like doing is adding a little grated parmesan cheese to the buttered side, and maybe some kind of seasoning (garlic powder, italian seasoning, cayenne, etc...) before putting on the griddle. It gives the crust a little more crunch and definitely a more "grown up" taste.

If you have some lunch meat, bacon or other leftover meat (roast chicken, pot roast, etc...) you can try adding a little of that as well. You might want to slightly heat the meat before adding to the sandwich.

I also like using different types of cheese inside or mixing two flavors of cheese. I have tried asiago cheese spread, and swiss and other flavors as well. Last night I did some up with a buffalo flavored cheddar and a garlic white cheddar cheese with some ham and the parmesan crust. Very yummy.

Add Green apples and a tiny bit of dijon mustard. Also you could try a smoked gouda cheese and different bread if you have it. And if you have some left over steak sautee it with peppers and onions and melt cheese like a philly melt

Enjoy!

Try adding thinly sliced apples and bacon. The salt and sweet flavors go so well together and are so grown up.

When I make my daughter grilled cheese; for mine I take a cheese, any will work; pizza sauce and pepperoni or veggies on the bottom piece of bread then add the other piece of bread on top and cook. YUM! In PA we call them Mountain Pies.

Try adding thinly sliced ham, green onion, green pepper, and grated carrot. Add a bit of parmesan cheese, and voila! Healthy and delicious.

Use thin sliced apples and sprinkle with a bit of cinnamon.

Use different cheeses and throw in a slice of ham.

Spread the inside of the bread slices with mushroom soup. Add cheese and grill (I really like this).

Scramble an egg and mix with chopped green pepper, onion, and ham. Put cheese on top and grill like always. I like to add a bit of hot sauce for some sass. This is really good.

Add a teaspoon of mustard (powder or ready made), chopped red pepper. Finely grated onion, a bit of chopped ham. Combine all, or leave out some. Either way it'll be delish!!

I use different kinds of cheese that I have in the cupboard. I like the idea about the bacon. Also, salt and pepper.

Tomatoes and bacon! It might sound odd, but someone introduced me to spicy brown mustard spread lightly on top of the grilled cheese after it is all done. SO GOOD! =P

Ham and tomato! Also, I don't know if you are making the traditional processed cheese one for the kids but try another kind of cheese for yours. Real cheddar cut thinly or monterey jack with a thin slice of ham and tomato... yum!

Also to make it cheesier without making it soggy, add another piece of bread. e.g. when you finish grilling the first side and the other side is down on the grill, add a piece of cheese to the freshly grilled side and then another piece of bread to the outside and flip it and grill again! Extra cheesy without being soggy! It's delicious!

If you don't have the toppings to add to the sandwich then consider what you will dip it in. Dipping it in ranch, tomato sauce, BBQ sauce can make a delicious alteration to the sandwich!
