Does anyone know how to make a really good Alfredo Sauce? |

Easy and quick Alfredo Sauce
8oz cream cheese, cut into cubes 1/2 cp butter 3/4 Parmesan cheese 1/2 cp milk
In a medium sauce pot, combine all ingredients, wet ones first! Stir continuously on low-heat. Cook until smooth and creamy.
Add cooked chicken, steamed broccoli , and pasta
It's important to add wet ingredients first, b/c if you do the dry ones first it'll scorch on the bottom of the pan.

The above recipes are good... let me also add that you have to be relatively quick when working with alfredo, or the sauce will separate (the cream base and butter)... NO WATER!!!! heh... only heavy cream... yeah it's bad for you... but sooooo good :) Just balance one good alfredo meal with lots of healthy other stuff... oh and for me, the pinch of nutmeg is the key... gives it it's own flavor!

Homemade is best, but, if you are too busy, you can buy an alfredo sauce packet at your local grocery store.
Knorr makes a great sauce packet. You just add milk and butter. AND, it tastes pretty darn good.

This is the easiest way Ive found and its the only one i use. Its soooo rich and delicious! 2 sticks butter, 2 sticks cream cheese. freshly grated parmesean and romano cheese to taste (about 2/3 cup parmesean and a little less romano, a little milk to thin the sauce and thats it. Melt the butter and cream cheese while stirring to combine (a whick is best) and them add the milk to thin it and the cheeses and your good to go. And never use water. If you dont have all the ingredient dont try making it. good luck

Ingredients 3 Tbsp. Dried Tomato & Garlic Pesto Mix 1/2 cup (1 stick) butter 2 cups heavy cream 8 oz. softened cream cheese 1/2 cup freshly grated Parmesan cheese 8 oz. prepared pasta of choice

1 cup butter 3/4 pint heavy cream salt and pepper to taste 1 dash garlic salt 3/4 cup grated Romano cheese 1/2 cup grated parmesan cheese
In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

Cook's Notes Alfredo is NOT just a pasta sauce. I use this recipe to serve over baked chicken. It's also very good when using leftover chicken breast and broccoli florets. Just throw the chicken and broccoli into the sauce and heat!

You don't use water, or milk, or half & half. You use CREAM! Otherwise, you can' tbring it to a boil and melt the parmesan cheese! Don't bother make it if you don't have the right ingredients, you'll just waste what ingredients you do have.
~~Real Fettucine Alredo~~
1 pound fresh fettucine 8 Tbsp. butter 1 cup heavy cream 1 cup freshly grated Parmigginao-Reggiano cheese Freshly ground black pepper, to taste Freshly grated nutmeg
As the water for the pasta begins to boil, melt butter in large sauté pan over low heat. Add cream to butter and let it warm.
At the same time, salt the pasta water and cook until al dente. Drain pasta thoroughly, and mix with butter and cream in sauté pan over low heat. Add cheese and toss until sauce thickens slightly. Season with pepper and nutmeg.
Remove from heat and serve immediately with additional cheese on the side.
Serves 4-6

I tried making some but it tasted terrible. I used parmesan cheese, butter, water (because we were out of milk), garlic, and salt. All the parmesan cheese clumped up at the bottom of the pot while the rest of the stuff was all watery and floating at the top. It tasted terrible.
